Sate Sauce
A sate sauce that’s better than the ones you reconstitute from dry powder. Based on this seriouseats recipe.
Ingredients
- 85g peanuts
- 3 cloves garlic
- 15g brown sugar
- 2 tbsp Massaman paste, or store-bought substitute.
- 2 tbsp light soy sauce
- 1 tbsp tamarind juice, or dried tamarind reconstituted with water
- 2 tbsp vegetable oil
- (optional) chili flakes
Preparations
- With mortar and pestle, grind garlic and sugar to a paste.
- Add peanuts and grind together to a chunky paste.
- Add Massaman paste, soy sauce, tamarind juice and stir until well combined.
- Add vegetable oil and stir to combine.
- Optionally, add chili flakes until the right level of spiciness.
