Beef taco
Adapted from recipes by Aura Cocina Mexicana.
This makes 2 servings.
First, make some red salsa,
and also prepare for making fresh tortillas.
Ingredients
Alambre (taco filling)
- 2 slices bacon (optional)
- 500 g beef chuck
- 1-2 white onion
- 1 bell pepper
- 2 tbsp oil
- salt and pepper to taste
Other garnish
- 1/2 cup cilantro
- 2 limes
- 1 avocado
Preparations
Alambre (taco filling)
- Chop bacon into small pieces.
- Cut beef into thin strips.
- Finely chop the white onion. Reserve 1/2 cup for garnish later. The reset will be used for cooking with the beef.
- Dice the bell pepper.
Other garnish
- Chop the cilantro
- Cut limes into quarters.
- Slice the avocado
Cooking the alambre
- Heat up oil in a pan on mid-high heat.
- Add the onion and cook until translucent.
- Add chopped bacon and cook until fat is rendered.
- Add bell peppers and cook until shiny.
- Add beef. Cook and stir occasionally.
- Season with salt and pepper.
- Cook until there is no water remaining. If the beef contains too much water, drain the excess water.
Assembly
- Make the tortillas.
- Place a tortilla in your plate. Add the beef filling, salsa, diced onion, cilantro, and a slice of avocado. Squeeze some lime juice on top.
- Eat a taco!
